Fried
Chicken
Ingredients:
Boneless
Skinless Breast Strips
Oil
for frying
Small
Bowl of Water
1
½ C Flour
2
tsp Salt
2
tsp Black pepper
1
tsp Garlic powder
1
tsp onion powder
¼
tsp Paprika
Dash
Cayanne Pepper
Instructions:
Heat
oil until hot. Mix flour and seasonings together on a plate, making sure it is
well incorporated. Take chicken and dip strips into flour, then water, and then
flour again. Making sure it is well covered. Fry in hot pan until meat is 180
degrees and browned on each side. (cooking times will vary based on how thick
the chicken is). Drain chicken in wire strainer.
Autumn’s Tips: I love to add
tarragon to my seasonings!
To
make the best fries: Take the left
over flour mixture and mix with bowl of water. Add more water until you get a
runny mixture. Cut potatoes into fries and dip into batter and fry in the same
grease you used for chicken. These are the best fries in the world!!!!
After
you are done with this oil, make sure you throw
it away!!! It will make you sick if you save it!
To
make fried bone-in chicken. Boil
chicken until slightly cooked (10 min). Dredge in the same fashion as boneless
and fry until 180 degrees. It is much harder to get bone-in chicken done.
To fry pork chops: Add 1 tsp extra
salt and 1 tsp ground mustard to flour and fry in the same way!
