Homemade Tortillas- They are to die for!

 Homemade Tortillas- They are to die for!

Ingredients:
3 Cups All purpose Flour
1 tsp Salt
½ tsp Baking powder
1/3 C Veggie Oil
1 Cup of boiling water (Very HOT)

Instructions:
Mix the flour, salt, and baking powder with a whisk. Add the canola oil and mix with your fingers until all the oil is incorporated and the mixture looks like fine crumbs. Add 1 cup of hot water and mix until a ball is formed. Cover with plastic wrap and let the dough rest for about 5 minutes. (I have also refrigerated it overnight).

Divide the dough into 12 balls and roll out one at a time with a rolling pin until very, very thin on a floured surface. Brush off excess flour. Cook on a hot, ungreased griddle over medium-high heat. Turn the tortilla when brown blisters form on the first side. Let cook 10-15 seconds on other side. Stack the totillas and serve warm.

Autumn’s Tips: Make sure your Tortillas are very thin!!!  Preheat pan until very hot while you Roll tortillas out. The cooking process will go very fast, do not multi task during the cooking. They burn very easy. Did I mention to make sure they are thin???

To make flatbread for a quick pizza or sandwhich make them a little thicker and cook in the same manner.

P.S. Do not attempt to make tortilla chips with this recipe. To make tortilla chips you have to use corn flour. These are not good for chips! (I made this mistake).

Tomato Paste Sauces


Autumn’s Pizza Sauce
Ingredients:
1 6-oz can of tomato paste
½ C hot water
1 tsp Sugar
½ tsp Salt
¼ tsp Black Pepper
½ TBSP Italian seasoning
Dash of Red Pepper Flakes (optional)

Instructions:
Combine all ingredients with wisk. Make before you make pizza to give it time to mellow. Add extra seasonings to taste.

Autumn’s Tips: Add garlic, onion powder, red pepper, parmesan cheese for added flavor. Taste as you go, to make it to your preference. 

My pizza crust recipe is great with this sauce!


Autumn’s Pasta Sauce

Ingredients:
2 TBSP olive oil
½ White onion finely diced
2 tsp Minced Garlic
2 6-oz can of tomato paste
1 14-oz can of diced tomatos (Drained)
1 C hot water
2 tsp Sugar
1 tsp Salt
¼ tsp Black Pepper
1 TBSP Italian seasoning
Instructions:
Heat Skillet with oil. Once hot add onions and cook until tender and browned. Add garlic and cook for 1 min. Add rest of ingredients and heat until hot (5 min). Make sure Diced tomatoes are drained. To thin sauce, add a little pasta water from your boiled pasta. Add cooked ground beef or meat balls if wanted.

 Best Pizza Crust Ever!


Ingredients:

1 (.25 ounce or 2 ¼ tsp) package active dry yeast
 1 teaspoon white sugar
 1 cup warm water (110 degrees F/45 degrees C)
 2 ½  cups bread flour
 2 tablespoons olive oil
 1 teaspoon salt

Instructions:
Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
Stir in flour, salt and oil. Beat with fork until combined and knead with hands until smooth. Let rest for 5 minutes.
Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Spray with olive oil. Add cheese, next add sauce and toppings, then add cheese again, and finally finish with pepperoni on top. Spray pizza with olive oil again for best results. Bake in preheated oven for 15 to 20 minutes, or until golden brown. Let baked pizza cool for 5 minutes before serving.

 To make stuffed crust pizza add string cheese into crust J
To make breadsticks: After rise, form dough into small logs, brush with olive oil and bake until golden. Brush hot sticks with olive oil and sprinkle parmesan cheese and parsley on top.
Add parmesan, Italian seasonings, or red pepper flakes for added flavor.

Use crust to make Stromboli by folding crust over and pinching ends with toppings on the inside.

Quick Yeast rolls- No fail!

Quick Yeast rolls- No fail!
                                                                                                                                                                   
 
INGREDIENTS:

3 (.25-ounce) packets active dry yeast
1 3/4 cups warm water
1/2 cup honey
1/2 cup melted butter, plus more for brushing           2 teaspoons salt, plus more for sprinkling
2 large eggs, beaten
4 to 6 cups flour, plus more if needed

DIRECTIONS:

In the bowl of a stand mixer, fitted with the paddle attachment, combine the instant yeast, and warm water. Let it activate for 5 minutes until bubbly. Stir in the honey.

On low speed, add 1/2 cup melted butter, 2 teaspoons salt, and eggs. Slowly add the flour cup-by-cup until fully incorporated and the dough pulls away from the sides of the mixing bowl. Add more flour if it is too sticky. It should be very sticky dough, do not add too much flour.

Portion the dough into 24 even servings. Form the rolls into desired shape and place in a cast iron skillet or on a deep baking dish spaced evenly apart.

Preheat the oven to 400 degrees F.

Set aside and allow to rise covered and in a warm place for approximately 20 minutes, or until doubled in size. Brush the rolls with melted butter.

Bake for 25 minutes until the tops are golden brown. Remove from the oven and brush with more melted butter, and sprinkle with a little salt.


Autumn’s Tips: This recipe can be used as a traditional loaf bread, pizza dough, and for both savory and sweet rolls

Taco Bell Hot/ Mild Sauce






Taco Bell Hot/Mild Taco Sauce

Ingredients:
3 cups water
2 teaspoons cornstarch
1 6-ounce can tomato paste
3 tablespoons white vinegar
2-4 teaspoons chili powder
2 teaspoons salt
½-1 teaspoon cayenne pepper

Instructions:
Dissolve cornstarch in water in a medium saucepan. Add remaining ingredients and stir well. Bring mixture to a boil over medium heat, then reduce heat and simmer for 5 minutes. Turn off heat and cover until cool. Chill overnight, will not taste good until chilled for a long period of time (lets flavors mellow).


Autumn’s Tips: Depending on how hot you like it, add seasonings to taste. We like it hot so the max is really hot. Minimum is mild but still a little spicy.
